Shortly after the fall round-up, the cattle were loaded into the cattle cars and shipped to Chicago for market.
Each car had an attendant to go on the trip in order that the cattle might be fed and watered.
This is the story of one of these cowboys.
Following the unloading of the cattle in the Chicago stockyard, this cowboy headed uptown to a restaurant for dinner. The only seat in the house was next to a young lady who was about twenty years old and appeared to be wealthy and well educated. As the cowboy sat down next to the young lady he heard her placing her order.
"I'll have breast of young pheasant under glass, virgin, make sure it's virgin, catch it yourself; garnish it with french fries and parsley; bring me a cup of coffee, not too hot and not too cold; and waiter, open the windows, I smell a horse, there must be a cowboy in the house."
Thoroughly pissed off, the cowboy placed his order in this manner: "I'll have a duck, a fucked duck, make sure it's fucked, fuck it yourself; garnish my plate with horse shit; bring me a mug of cold beer as strong as Texas mule piss and blow the foam off with a fart; and waiter, kick down the wall, I smell a cunt, there must be a whore in the house."
가을 소 몰아 모으기가 끝난 직후, 소들은 시장에 내다 팔기 위하여 트럭에 실려졌다가 시카고행 배에 실려 나갔다.
가축 트럭마다 수행 카우보이 한 명씩 따라가는데 그건 가축들에게 먹이와 물을 주기 위해서였다.
이것은 이들 카우보이 중 한 명의 이야기이다.
소들을 시카고 가축 시장에 하역시킨 후, 이 카우보이는 저녁을 먹으려고 읍내 식당으로 향했다. 그 식당에 하나 남은 좌석은 부유하고 교육을 잘 받은 듯이 보이는 한 20살가량 되는 젊은 여자 옆에 있었다. 카우보이가 그 젊은 여자 옆에 앉았을 때 그는 그 여자가 주문하는 걸 들었다.
"난 온실 안에서 키운 어린 꿩의 가슴살을 먹을게요, 교미 경험 없는 거로요, 꼭 교미 경험 없는 거로 해 줘요, 당신이 직접 잡으세요, 요리에 프렌치프라이와 파슬리를 곁들이세요, 너무 뜨겁거나 너무 차갑지 않은 커피 한 잔을 주세요, 그러고 웨이터, 창문을 열어주세요, 말 냄새가 나네요, 식당에 카우보이가 있는 게 틀림없어요."
화가 끝까지 난, 그 카우보이가 같은 방식으로 주문을 했다: "나는 오리 요리를 먹을게요, 교미한 오리, 교미한 오리라야 합니다, 당신이 직접 교미시키세요, 내 요리에는 말똥을 곁들이세요, 나에게 텍사스 노새 오줌처럼 냄새가 강한 시원한 맥주 한 잔을 방귀로 거품을 날려 보내고 가져다주세요, 그러고 웨이터, 그 칸막이를 발로 차 넘어뜨리세요, 푸시 냄새가 나요, 식당에 틀림없이 매춘부가 있어요."
